三 | 不同人群的代谢速率、氨基酸重复利用率各不相同,部分人群利用率可达80%,部分仅为60%。“利用率不同,人体所需外源食物蛋白、氨基酸的供给总量和种类就完全不同。”任发政强调,这一机制充分印证了蛋白质营养的时空性、个体性,也是精准营养、差异化膳食干预的核心生理学依据。  谈及最新科研突破与产业升级方向,任发政表示,传统研究多聚焦蛋白质的氨基酸组成与消化吸收率,而当下前沿研究证实,蛋白质的功能活性不仅取决于氨基酸构成,更依赖其一级、二级、三级立体结构。

四 | 最新研究发现,大量功能性蛋白可通过细胞膜内外直接转运吸收,为蛋白营养利用开辟了全新路径。  对此,任发政指出,这一突破对食品加工工艺提出了全新要求。

五 | 行业未来的核心攻关重点,是在食品加工全过程中最大化保留蛋白质原始结构与活性,实现高活性蛋白的高效提取、保留与精准输送,让功能性蛋白充分被人体吸收利用。
